Chacun a emmen\u00e9 une bouteille, qui serait servie \u00e0 l\u2019aveugle, le th\u00e8me de la soir\u00e9e \u00e9tant les <b>accords avec le saumon<\/b>. Mizuki a pr\u00e9par\u00e9 divers plats japonais \u00e0 base de saumon pour essayer avec les diff\u00e9rents vins, dont des <b><i>sashimi<\/i><\/b> et <b><i>sushi nigiri<\/i><\/b>, <b><i>shiozake<\/i><\/b> (saumon sal\u00e9 grill\u00e9) et <b><i>misozuke<\/i><\/b> (saumon marin\u00e9 avec du miso et grill\u00e9)<\/p>\n<p><!--more--><\/p>\n<p><span style=\"font-size: 1.5em;\">Les vins<\/span><\/p>\n<p>Nous avons commenc\u00e9 par gouter tous les vins \u00e0 l\u2019aveugle, avant de les d\u00e9voiler et de passer \u00e0 table pour les accords.<\/p>\n<p><a href=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/pouilly-fuisse.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1130 aligncenter\" alt=\"pouilly-fuisse\" src=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/pouilly-fuisse-450x524.jpg\" width=\"450\" height=\"524\" srcset=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/pouilly-fuisse-450x524.jpg 450w, http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/pouilly-fuisse-257x300.jpg 257w, http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/pouilly-fuisse.jpg 1140w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Le premier vin \u00e9tait un <b>Pouilly-Fuiss\u00e9 2011<\/b>, un <b>Chardonnay<\/b> du <b>M\u00e2connais<\/b> en Bourgogne donc. Se le vin ne s\u2019est pas forc\u00e9ment d\u00e9marqu\u00e9 en d\u00e9gustation, il s\u2019est r\u00e9v\u00e9l\u00e9 avec le <em>sashimi<\/em> et <em>sushi<\/em> de saumon. Il est devenu plus fruit\u00e9 et souple avec le poisson, alors qu\u2019auparavant, il manquait un peu de pr\u00e9cision avec une texture un peu crayeuse. Il paraissait assez chaud, avec un alcool tr\u00e8s pr\u00e9sent et une petite \u00e9volution sur le miel et les fruits murs. Il manquait un peu d\u2019acidit\u00e9 et sa lourdeur a \u00e9clips\u00e9 le saumon le long du repas.<\/p>\n<p><a href=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/dr-loosen-riesling.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1132\" alt=\"dr-loosen-riesling\" src=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/dr-loosen-riesling-450x628.jpg\" width=\"450\" height=\"628\" srcset=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/dr-loosen-riesling-450x628.jpg 450w, http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/dr-loosen-riesling-214x300.jpg 214w, http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/dr-loosen-riesling.jpg 871w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Ensuite, nous avons eu droit \u00e0 un joli <strong>Riesling allemand<\/strong> de la <strong>Moselle<\/strong>, imm\u00e9diatement reconnaissable \u00e0 ses notes d\u2019ardoise, son fruit\u00e9 et le bel \u00e9quilibre entre les sucres et l\u2019acidit\u00e9. Le <b>Domaine du Paternel<\/b> s\u2019est montr\u00e9 un peu plus pr\u00e9cis et min\u00e9ral que le <b>Domaine La Ferme Blanche<\/b>, tous deux du mill\u00e9sime 2011. Je m\u2019attendais \u00e0 ce que ces blancs m\u00e9diterran\u00e9ens se comportent \u00e0 merveille avec le saumon, mais ils manquaient un peu de fruit et de corps et se sont un peu perdus en arri\u00e8re-plan.<\/p>\n<p><a href=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/domaine-mosse-achillee-rose.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1135\" alt=\"domaine-mosse-achillee-rose\" src=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/domaine-mosse-achillee-rose-450x588.jpg\" width=\"450\" height=\"588\" srcset=\"http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/domaine-mosse-achillee-rose-450x588.jpg 450w, http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/domaine-mosse-achillee-rose-229x300.jpg 229w, http:\/\/www.japanese-food-and-wine.com\/wp-content\/uploads\/domaine-mosse-achillee-rose.jpg 918w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>Finalement, j\u2019ai aussi ouvert un <b>ros\u00e9 moelleux<\/b> (env. 80g de sucre r\u00e9siduel) de la <b>Loire<\/b> en vin de table, mais de la r\u00e9gion d\u2019<b>Anjou<\/b>. Avec ses ar\u00f4mes de fraise mure, j\u2019\u00e9tais surpris de retrouver un cote plus miell\u00e9, presque sirupeux en bouche, bien qu\u2019une acidit\u00e9 bien pr\u00e9sente offre un \u00e9quilibre. Le saumon au miso \u00e9tait le meilleur choix pour ce vin, m\u00eame si l\u2019accord fonctionnerait sans doute mieux avec un \u00e9quilibre un peu plus sec (de type demi-sec).<\/p>","protected":false},"excerpt":{"rendered":"<p>J\u2019ai invit\u00e9 des coll\u00e8gues pour une petite d\u00e9gustation informelle apr\u00e8s le boulot.
